apple cake/turnovers


Apple Cake

Apple Turnovers
Another Dorie Greenspan recipe :) So because I was too cheap to buy unsalted butter I decided to use margarine. lol Therefore it didnt turn out :(
I wanted to make turnovers, but the dough was too oily and too soft to work with even though I had refridgated it for 24hrs. I tried making a couple of turnovers and I used up more dough than apples.. therefore plan b was to turn it into an apple cake/pie.
The cake/pie turned out great.. or maybe it was great because I love apple anything.

Apple turnovers attempt number 2 after finals!!
ingredients:
for dough
8 oz unsalted butter
1 cup sugar
2 large eggs
1 tbsp baking powder
1/2 tsp salt
juice of 1 lemon
3 1/4 to 3 1/2 cups flour
for apples
10 medium baking apples (i used idared apples)
squirt of fresh lemon juice
1 cup raisins
1/4 cup sugar
1 1/4 tsp ground cinnamon
directions:
Preheat over to 375 F
1. Whisk together flour, baking powder, baking soda, grind cinnamon, nutmeg, ground ginger and salt
2. In large bowl, beat the butter and sugar on medium speed, scraping the bowl as needed, for 3 minutes or until the mixture is smooth, thick and pale. Add eggs one at a time, beating for about 1 minute after each addition - light fluffy batter
3. Reduce the mixer speed to low and beat in the apple butter
4. On low, add the grated apples and mix to blend competely
5. Add dry ingredients, mixing only until they disappear
6. Fold in nuts and raisins
7. Pour batter into bundt pan. Bkae for 50-55 mins.
***If have time, wrap cake in plastic overnight at room temperature.

double apple bundt cake


I loveee apples, especially apple pies. I decided to try an Apple Bundt. This recipe was taken again from Dorie Greenspan's book. My mom found it really moist and too wet for her liking. I loved it and so did Mr. S-O and Alan.
I dont even remember when I made this.. but maybe a month ago?? Late post :)
ingredients:

1/2 tsp ground cinnamon
1/4 tsp nutmeg

2 medium apples, peeled cored and grated
1 cup pecans or walnuts
1/2 cup raisins
directions:
Preheat over to 350 F
9' Bundt pan
1. Whisk together flour, baking powder, baking soda, grind cinnamon, nutmeg, ground ginger and salt

mini bagels


I was surfing food blogs and I came across delicious days. The mini bagels on her page were just tooo cute.
ingredients:
2 cups flour
1 tsp salt
165ml warm water
1 tsp olive oil
1 tsp dry yeast
directions:
1. Mix flour and salt in a large bowl. Make a little depression in the middle and pour in water and olive oil. Sprinkle on dry yeast. Cover bowl with towel and let it rest for 5-10 minutes.
2. Knead dough until it becomes smooth, shiny and elastic. Add some flour if it feels too sticky. Again, cover bowl and let it rest at a warm place for 60-90 minutes.
3. Preheat oven to 400 F. Punch down dough and shape into 16-20 little balls. Create a hole in the middle and make it look nice. Make holes larger than you think is necessary.
4. Heat up pot of salt water and bring to a boil, reduce heat and let simmer. Send bagels into the water for about a minute. They will float to the top.
5. Sprinkle with sesame, poppy seed or anything of your chice. Bake in the oven for about 10-15 minutes or until they are golden brown.

gingered carrot cookies


I was flipping through my sister's Dorie Greenspan book. I was happy with the results of my carrot cake and I decided to attempt carrot cookies. I don't really like ginger as much... so I dont find it amazing, but it will do as a nice snack for school this week. :)
**recipe take from Dorie Greenspan's book - From my Home to Yours
ingredients:
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 tsp ground ginger
pinch of nutmeg
1 1/2 sticks of unsalted butter
2/3 cup sugar
1/3 light brown sugar
1 large egg
1/2 tsp vanilla extract
1 cup grated carrots
1 cup sweetened coconuts
1 cup raisins
1/2 cup coarsely chopped pecans i used walnuts
directions:
Preheat oven to 375 F.
1. Whisk together the flour, baking powder, salt, ginger and nutmeg then set aside
2. In a large bowl beat the butter on medium speed until creamy and smooth.
3. Add sugars and beat for 2 minutes, then add the egg and beat for another minute.
4. Reduce the mixer speed to low and beat in vanilla, continuing on low speed, add dry ingredients in 2 or 3 batches and beat only until they just disappear into the mix. Don't over mix.
5. Mix in carrots, coconut, raisins and pecans.
6. Spoon dough onto baking sheets and leave about an inch between them, since they don't spread much. Bake 16-18 minutes - rotate mid way. Bake until light brown and only just firm on top.

carrot cake with cream cheese icing


NYE 2006 was held at Jovanna's place. I decided to bake a carrot cake to bring over as a snack. I made a bundt cake size and also two small rectangular ones to eat at home. I really like the cream cheese icing.

ingredients:
1/3 cup margarine or butter
1 cup granulated sugar
2 eggs
1 tsp vanilla
1 large ripe banana, mashed
2 cups grated carrots
2/3 cup raisins
1/2 cup canned pineapple, drained and crushed
1/2 cup 2% yogurt
2 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp nutmeg
ICING
1/3 cup light cream cheese, softened
2/3 cup icing sugar
1 tbsp 2% milk
directions:
Preheat oven to 350 F.
1. In large bowl, cream together margarine and sugar until smooth; add eggs and vanilla and beat well (mixture may look curdled).
2. Add mashed banana, carrots, raisins, pineapple and yogurt; stir until well combined.
3. In bowl, stir together flour, baking powder, baking soda, cinnamon and nutmeg. Add to the carrot mixture; stir just until combined.
4. Pour into prepared pan and bake for 40 to 45 minutes or until cake tester inserted in the center comes out clean.
5. In bowl or food processor, beat together cream cheese, icing sugar and milk until smooth; drizzle over top of cake. Decorate with grated carrots if desired.

christmas baking 2006
My sister and I decided to bake cookies for Christmas to give away this year. We set out at 9am on the 22nd to bake.. and we finished at 4:30pm. She has previously prepared some of her dough on the weekend.. and I made my oatmeal raisin cookie and my peanut butter cookie the day before. If we hadn't it would have taken us A LOT longer. It took us and additional 1.5 hours to package and put it all together.
It was fun, but tiring. I was exhausted by the end of the day...
I hope everyone enjoyed them as much as I had enjoyed making them. I dont have the recipes for all of the cookies at the moment. I do, but I'm just too lazy to type them up.
oatmeal raisin cookies

I didnt like the oatmeal raisin cookie that I baked recently. I used this recipe a year a two ago, when I was experimenting with different oatmeal raisin recipes. I really liked this one. I found this a couple years ago in the All American Cookie Book.
peanut butter cookies

I decided to make a peanut butter cookie just for David's sake because I know how much he loves peanut butter. This actually turned out a lot tastier than I had imagined. It was nice with a tad of crunch. The peanut butter wasn't too strong either. I used the recipe from the Dorie Greenspan book.
chocolate cookies

I wanted to have a chocolate cookie, yet I didnt want to use real chocolate. I went through Martha Stewart's website and I found this chocolate cookie, which used cocoa. I found this a bit sweet, but my mom really liked this cookie. A few others also claim this one to be their favourite.
Grammy's Chocolate Cookies
ingredients:
2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups (2 sticks plus 4 tablespoons) unsalted butter, room temperature
2 cups sugar, plus more for dipping
2 large eggs
2 teaspoons pure vanilla extract
directions:
Preheat the oven to 350°
1. Sift together flour, cocoa powder, baking soda, and salt. Set aside.
2. In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix to combine. Gradually add dry ingredients, and combine with mixer on low speed. Cover bowl with plastic wrap, and chill until dough is firm, about 1 hour.
3. Roll dough into 1-inch balls. Dip top of each ball into sugar. Place on prepared baking sheets about 1 1/2 inches apart. Bake until set, about 8 minutes.
applesauce cookies

This cookie didn't turn out. My sister labelled this cookie as the 'sad cookie'. She claims it looks very sad. I wanted to bake a cookie with fruit, but I think put too much apple. I used fresh apples, which I puree and added to the mixture. When we gave my dad a plate of cookies that contained a mixtures of cookies I made and my sister made... my dad poked at the apple. It was really soft. He immediate put it back down once he held it. Poor apple. :(
chocolate chip expresso walnut cookies

This has recently become one of my favourite cookies. It was also from the Dorie Greenspan book. My sister made this cookie a month ago and I fell in love with it. Though I find it really filling, so I can only have one cookie at a time.
cranberry pistachio cookies

The following are baked by my sister. This was really good. I love how the pistachio goes with cranberry. It was delicious, but did not fit in with my batch of cookies for I was making nice round big drop cookies.

These were okay. I made something like this last year.
banana bread

My sister's famous banana bread. The banana bread, which she bakes for 6 consecutive weeks sometimes... I get so sick of banana bread sometimes. But nevertheless they are always good as a small snack.
chocolate crackle cookies

These crackles I believe was a Martha Stewart recipe. They turned out pretty good.. a cake like texture. Though it required lots of chilling time. She took a couple of hours to prepare this batch.
Cookies Galore

Our boxed up cookies as we prepared other batches. Our kitchen and table is a mess.
Packaging

We took another good hour and almost a half to package our cookies. We have all the boxes and different cookies laid out so we can package them. And thereee... the beautiful finished result. :)

I was craving for Oatmeal raisin chocolate chip cookies the week before finals. I needed some munchies, so I decided to try out this recipe. I have made from 3 other recipes before and I like the second one I tried from. I will post up recipe and pictures if I get around to make them again this christmas. I plan on baking some cookes, but at the moment looks like I'll be too lazy to get around to make them.
On my list I had the oatmeal raisin, peanut butter cookie, almon cookies and I was thinking maybe vanilla bean - all easy drop cookies, but I'm lazy.... so we'll see.
I love my sister's chocolate chip expresso cookies - those are sooo delicious and extremely filling.
**recipe take from Domestic Goddess
ingredients:
1 cup butter, room temperature (you can use lard if you want)
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 ½ cups whole wheat flour
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups oatmeal
¾ cup raisins
¾ cup semi- or bitter-sweet chocolate chips
directions:
Preheat oven to 375 F.
1. Cream butter until light and fluffy. Add sugar and cream together. Add
egg and beat well with vanilla.
2. Combine flour, baking soda and salt. Add to creamed mixture and mix
together. Add oatmeal and mix well.
3. Fold in raisins and then fold in chocolate chips.
4. Drop mixture into cookie sheet
5. Bake for 12 minutes.

chocolate and vanilla cupcakes

Chocolate and Vanilla Cupcakes with chocolate buttercream frosting

I decided to bake cupcakes for Christine, G and Matty's 22/21st birthday. The white frosting was too runny and it didn't turn out AS nice, so I decided to give them to G instead of Chris. hahaha =)
chocolate cupcakes

makes 12 cupcakes
ingredients:
1 cup flour
1 cup sugar
1/4 cup cocoa powder
3/4 tsp baking soda
3/4 cup milk
1/4 cup butter
1 tsp vanilla extract
1 egg
directions:
Preheat oven to 350°F.
1. Measure out everything into mixer bowl, except the eggs
2. Mix on low speed just until incorporated
3. Beat on high speed for 2 minutes
4. Add eggs, beat on high speed again for 2 minutes

ingredients:
1 1/2 cup flour
3/4 tsp baking powder
1/4 tsp salt
6 tbsp butter
3/4 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup milk
directions:
Preheat oven to 350°F.
1. In a bowl, combine flour, baking powder and salt.
2. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing until incorporated and beat in vanilla extract.
3. Add flour mixture and milk aternately, beginning and ending with flour.
4. Pour into cupcake pan and bake for about 15-20 minutes.

enough to lightly frost 24 cupcakes
ingredients:
1/2 cup butter
1/2 cocoa
4 cups icing sugar
1/4 cup milk
directions:
1. Beat butter on high for 30 seconds until soft.
2. Add cocoa and 1 cup of sugar and beat until incorporated.
3. Add half of the milk and remainder of sugar and beat until incorporated.
4. Continue to add milk until you get the consistency you want.
Finals are approaching.. I need to stop munching and get down to work - study!! hehe I want to try apple turnovers.. but its very time consuming. hehehe I still to STOP stressing.. Im breaking out. Hopefully I can go out to try new things instead of wasting time baking, so I can still post. :)

Chocolate and Vanilla Cupcakes with chocolate buttercream frosting

I decided to bake cupcakes for Christine, G and Matty's 22/21st birthday. The white frosting was too runny and it didn't turn out AS nice, so I decided to give them to G instead of Chris. hahaha =)

makes 12 cupcakes
ingredients:
1 cup flour
1 cup sugar
1/4 cup cocoa powder
3/4 tsp baking soda
3/4 cup milk
1/4 cup butter
1 tsp vanilla extract
1 egg

1. Measure out everything into mixer bowl, except the eggs
2. Mix on low speed just until incorporated
3. Beat on high speed for 2 minutes
4. Add eggs, beat on high speed again for 2 minutes
